Place the turkey, breast side up in the aluminum pan or regular roasting pan. If your using a regular pan you can make a foil tent by bringing the foil up and over the turkey, leaving a 1” space between the turkey and the foil to allow circulation. Crimp the foil together to hold it into place. You can also brush the Turkey’s skin with melted butter for added tenderness. Put an accurate meat thermometer into the thickest part of the turkey to monitor and test for doneness. For nicely browned skin, roll down the foil on the top and uncover the turkey for the last 45 minutes of roasting time. Place the tip of the thermometer into the thigh muscle pointing towards the body. Make sure your not touching the bone. If you choose to cook the dressing inside the turkey be certain that both the turkey and the dressing have reached a temperature of 165º F or above. Continue roasting the turkey until the thermometer reaches 180º, if your not using one, then roast until the drumsticks move easily in their sockets and the juices run clear. Wait about 20 minutes after removing the turkey from the oven to allow the juices to distribute. Lift out, and place the turkey on carving board or platter. Slice breast meat, the legs and wings may be left whole. The drumsticks can be cut off with knife and served. Pour broth over turkey to prevent drying. All leftovers need to be refrigerated within two hours after the meal. Break the leftover turkey into small pieces, put them into a shallow pan, and refrigerate,uncovered, until it is cool. When they are completely cool, cover them. For the best quality of leftover turkey, keep it in the refrigerator for only 3 to 4 days maximum. The dressing and gravy quality changes after two days, so they should be used right away.
